Welcome to another addition of meals from Our Family Table! Today we’re featuring some of our favorite Soups, stews and chili.

Chicken Chili

Chili was always a quick go to at my house. I know there is a great debate whether true chili has beans or not. I feel it’s up to the individual’s taste.
I eat beans of all kinds. I think black beans are my favorite. My guy on the other hand doesn’t eat beans. He will eat green string beans, but not soup beans or baked beans. That just means more for me!
My chicken chili uses a few short cuts to save time. I use chili flavored beans and canned diced tomatoes with green chilies. Both these items are found under various brands in the canned food aisle.
If you prefer a total scratch recipe, use regular canned beans, chili powder, garlic, salt, pepper, cumin, diced tomatoes, diced jalapenos, onions, tomato sauce, lime and chicken.

Total Time: 20 minutes

Yield: 4 to 6 servings

Serving Size: 1 cup

Chicken Chili

Ingredients

  • 8 ounces chicken breast cut into 1/2-inch pieces
  • 1 14-ounce chili beans
  • 1 14-ounce can diced tomatoes with green chilies
  • 1 cup chopped kale

Instructions

  • Cook chicken and kale in water on medium heat until thoroughly cooked, about 10 minutes. Drain.
  • Add beans and tomatoes. Heat thoroughly. Serve.

Prep Time: 20 minutes

Cook Time: 2 hours

Total Time: 2 hours, 20 minutes

Yield: 8 to 10 servings

Serving Size: 1 cup

Beef Noodle Soup

Ingredients

  • 2 quarts beef stock
  • 1 1/2 to 2 pounds chuck roast (I use Certified Angus Beef Brand) cut up
  • 2 cups chopped celery
  • 1 cup chopped onions
  • 2 cups chopped carrots
  • 2 cups uncooked pasta
  • 6 sprigs thyme divided
  • 1 tablespoon oil oil
  • salt and pepper to taste

Instructions

  • In a large Dutch oven, season beef and in oil.
  • Add 1/2 the celery, onion and carrots. Add enough broth tho cover. Simmer on low for about 2 hours or until beef is tender.
  • Add remaining vegetables and thyme.
  • While beef cooks, prepare noodles according to package directions.
  • Add cooked noodles stir and serve.

Smores Latte

Smores Latte delivers rich coffee and chocolate milk in a warm drink topped with toasted marshmallows and graham crumbs. Part of our Winter Warm-Up Drinks Series from Festive Foodies.

I toasted the marshmallows on a cookie sheet under the broiler.  Easy and you can toast them as dark as you like. Allow the marshmallow to cool slightly before placing on top of the latte. 😉

Drizzle with chocolate sauce and sprinkle on graham crumbs.

Ingredients

  • 6 ounces milk
  • 2 ounces coffee
  • 1 ounce chocolate syrup plus syrup for drizzle
  • 1/4 cup mini marshmallows
  • 1 tablespoon graham cracker crumbs

Instructions

  • Toast the marshmallows on a cookie sheet under the broiler. Allow the marshmallow to cool slightly before placing on top of the latte.
  • Combine milk, coffee and chocolate in a small saucepan. Heat over low heat to 160 degrees. Pour into mug, Top with toasted marshmallows. Drizzle with chocolate sauce and sprinkle on graham crumbs.

For this month’s bake, I went with an old favorite.

Sometimes we like a bit of meat in ours. I’ve used bacon, hamburger and even salmon. Today we were hungry for Turkey Ham Mac and Cheese.

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Yield: 6 to 8 servings

Serving Size: 1 cup

Ingredients

  • 2 cups chopped turkey ham
  • 2 cups dry pasta
  • Cheese sauce
  • 1 1/2 cups milk
  • 1 tablespoon cornstarch
  • 1 tablespoon butter
  • 1 teaspoon dry mustard
  • 4 ounces cheddar, shredded
  • salt and pepper to taste

Instructions

  • Cook macaroni according to package directions. Drain.
  • cheese sauce
  • Whisk together milk, cornstarch, butter, mustard, salt and pepper in a medium saucepan. Bring to a boil over medium-low heat. Boil about 1 minute, reduce heat and simmer, stirring constantly until thickened.
  • Remove from heat and whisk in cheese.
  • Add macaroni and turkey ham.
  • Bake at 350 for approximately 30 minutes until thoroughly heated and cheese is melted.
  • Garnish with chopped parsley if desired.
