It’s the Holiday season and we are all busy. For some it’s the only time we get-together to share in the Holiday spirit. Christmas parties and New Year’s Eve celebrations seem to top the list.

This Happy Holidays Apple Cocktail is made with naturally flavored UV Salty Caramel Apple vodka. A taste of the holidays in every sip.

Happy Holidays Apple Cocktail

Ingredients

  • 2 ounces UV Salty Caramel Apple Vodka
  • 2 Tablespoons apple juice concentrate or simple syrup
  • Sparkling grape juice

Instructions

  • Fill a rocks glass with ice.
  • Add vodka, juice concentrate and sparkling grape juice. Stir.
  • Garnish with apple slice if desired.

Notes

Dip apple slices in lemon juice to retain color.

Tropical Cocktail Wings will wow your guests. Fast, easy and it’s party time! Serve them in a carved pineapple for extra special Holiday flair!

This week Sunday Supper wants to show you last minute entertaining doesn’t mean just setting out cheese and crackers! We’ve come up with over 30 ideas to make last minute guests feel extra special.

The holiday season schedule can be tough on us trying to include everyone and not forget anyone! I admit my eyes bug out when I get a last minute Christmas card from someone I didn’t have on my list! A quick scramble to reciprocate. Pick the right card. Cross my fingers that I have stamps left. Rush to the post office dropbox (yes, they were closed for the day) and get it in the mail!

So I try my best not to have a meltdown when planning last minute parties or get-togethers.

These Tropical Cocktail Wings look like you went to a lot of trouble but in reality are ready in less than 30 minutes!

I keep a bag of frozen wings handy for when Tom’s football buddies drop over to watch the game. Wings are so versatile, right? Hot wings, BBQ wings, Garlic Parmesan and so on.

Coconut milk for the dredge and pineapple juice in the glaze will send your mouth on a tropical vacation! Don’t forget to toast the coconut!

Tropical Cocktail Wings

Tropical Cocktail Wings #SundaySupper

Yield: 24 wings

Serving Size: 1 wing

Ingredients

  • 24 fresh or defrosted wings
  • 1 cup coconut milk
  • 1/2 cup flour
  • salt and pepper to taste (for flour)
  • oil for frying
  • glaze
  • 1/2 cup brown sugar
  • 1/4 cup fresh pineapple juice
  • 1/4 cup orange juice
  • 1 Tablespoon soy sauce
  • 1/2 teaspoon ground ginger
  • coating
  • 1 cup toasted coconut

Instructions

  • Dredge wings in coconut milk and seasoned flour. Deep fry at 350 in vegetable oil until golden brown and 165 degrees about 8-10 minutes. Drain on paper towels.
  • While wings fry, bring glaze ingredients to a boil, whisking constantly. Reduce heat and simmer until thick and sugar is dissolved.
  • Dip wings in glaze and roll in toasted coconut. Serve alone or with dip.

Notes

Wings will be sticky so break out the wet napkins!

Tassies are a traditional Christmas cookie you will find in kitchens and bakeries during the Holidays. Nut filled tassies are the most common version. I like to switch it up a little.

Chocolate Brownie Tassies bake delicious brownies in a light cookie dough cup. You can add a bit of cocoa to the dough to make the all chocolate version.

Drizzle the Chocolate Brownie Tassies with melted caramel or white chocolate for a stunning display.

Chocolate Brownie Tassies

Yield: 24

Serving Size: 1 each

Ingredients

    dough
  • 1/2 cup butter
  • 3 ounces cream cheese
  • 1 cup flour
  • 2 Tablespoons cocoa (optional)
  • Brownie
  • 1/2 cup butterscotch chips
  • 1/2 cup chocolate chips
  • 1/4 cup butter
  • 2 eggs, beaten
  • 2 Tablespoons sugar
  • drizzle
  • 2 ounces white chocolate and/or caramel bits

Instructions

    dough
  • cream together butter, cream cheese and flour into a soft dough.
  • Divide dough into 24 pieces. Press into ungreased mini muffin pans. (Chill dough if too sticky to handle)
  • brownie
  • melt together butter and chips over low heat.
  • remove from heat and temp eggs and sugar into mix.
  • spoon into dough cups.
  • Bake at 325 for about 20 minutes until shells are firm but not hard and brownie is set.
  • Cool on wire rack. Drizzle with white chocolate or caramel if desired.
