I like adding a sandwich option to my BBQ party. Grilled Tuscan Chicken Flatbread sandwiches are easy to prepare and serve. You can make a pan of the chicken and vegetables and a stack of grilled flatbread and it’s self serve time.

Grilled Tuscan Chicken Flatbread

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: 1 serving

Serving Size: 1 each

Ingredients

  • 1 flatbread or tortilla
  • 1 4-ounce chicken breast
  • 1 small zucchini thinly sliced lengthwise
  • 1 green onion sliced lengthwise
  • 1/2 red bell pepper
  • 2 tomato slices
  • 1/4 cup fresh spinach
  • 1 tablespoon Italian dressing
  • 1 tablespoon vegetable oil for grilling

Instructions

  • lightly grease grill with vegetable oil
  • lightly grill zucchini, pepper and onions to crisp tender, (about 2 minutes), set aside
  • Brush chicken with Italian dressing. Grill chicken turning once until internal temperature reaches 160 degrees. Set aside.
  • Lightly grill flatbread.
  • Assemble sandwich with grilled chicken, vegetables. Drizzle with additional Italian dressing if desired.

I like to have a few appetizers and snacks around while we wait for the main grilled food to cook.
An easy one to serve is BBQ Beef Spring Rolls.
BBQ Beef Spring Rolls
You can make the beef ahead of time. When it’s party time, assemble the spring rolls.
Soak the rice paper for about 10 seconds, add a spoon of filling and roll up. Deep fry for about 2 minutes and serve with extra sauce. Quick and easy.

Serve these rolls with plenty of napkins. Messy saucy food IS THE best!

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: 12

Serving Size: 1 each

Ingredients

  • 12 rice paper spring rolls
  • 1 lb steak ( I use Certified Angus Beef Brand)
  • 1 large onion, thinly sliced
  • 1 tablespoon vegetable oil
  • BBQ Sauce
  • 2 cup tomato sauce
  • 2 tablespoon Worcestershire sauce
  • 2 tablespoon red wine vinegar
  • 2 tablespoon brown sugar
  • 1/2 teaspoon smoked salt
  • oil for deep frying

Instructions

  • Pan fry steak and onions in oil until steak reaches 150 degrees. Remove from heat, rest 5 minutes then slice into thin pieces. Chop steak together with onions.
  • Whisk together sauce ingredients. Add 1/4 cup sauce to beef mixture.
  • Dip rice paper in water for 10 seconds. Add about 1 to 2 tablespoons of filling. Be careful not to overfill. Fold in edges and roll up.
  • Deep fry for 2 minutes at 350 degrees. serve with remaining sauce.

Notes

You can make the sauce and beef ahead of time.

lists itself as America’s oldest brewery. I have been to the bottling factory. Very impressive from this brewery that also makes ice cream. Win, win!

Ingredients

  • 4 medium potatoes, peeled and cut into 1-inch pieces(about 3 cups)
  • 4 cups vegetable broth
  • 1 cup chopped leeks
  • 1/4 cup carrot shreds
  • 1/4 cup chopped cooked bacon
  • 1/2 cup beer
  • 1/4 cup shredded cheddar (optional)

Instructions

  • Bring potatoes, leeks, and broth to a boil. Reduce heat and simmer for about 5 minutes. Add carrots and continue cooking another 10 minutes.
  • Add bacon and beer. Salt and pepper to taste. Garnish with cheese if desired.

Happy Mother’s Day everyone! What better way to celebrate Mom than honoring her with a burger. That is when it’s #BurgerMonth with #GirlCarnivore !

Meatloaf was a standby at our house. Leftover meatloaf always found it’s way into sandwiches.

So I played on that idea and made Mom’s meatloaf into a burger style sandwich and cut out the loaf as middleman!

Juicy meatloaf burgers with cheese, crispy onions, lettuce and tomato on a buttery toasted ciabatta roll. Mom would be proud.

Cook Time: 12 minutes

Ingredients

    burger
  • 1/2 lb ground meatloaf mix (beef, pork and veal)
  • 1 egg
  • 1/4 cup bread crumbs
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon granulated garlic
  • 1/2 teaspoon salt
  • 1 tablespoon tomato sauce
  • 1 tablespoon grated Parmesan cheese
  • toppings
  • 2 slices cheese
  • leaf lettuce
  • tomato slices
  • 1/2 cup crispy onions (bagged salad topping or homemade)
  • 2 ciabatta rolls toasted or grilled
  • 1 tablespoon oil for coating grilling

Instructions

  • Mix together meatloaf mix, bread crumbs, egg, seasonings, tomato sauce and Parmesan cheese.
  • Divide mixture in half. Shape each piece to form a burger about 1/2-inch thick.
  • Grill burgers on lightly greased grill over medium high heat, flipping once. Internal temperature should register 160 degrees.
  • Add cheese to melt. Assemble burger and enjoy!
