Boozy Bacon Cherry Crumble

Boozy Bacon Cherry Crumble with dark sweet cherries, bourbon maple syrup, oats and BACON! Head down the road to Delicioustown!

I know people that salivate at the word, “Bacon”. They drool like puppies at the smell of sizzling hickory-smoked strips of meaty goodness.

Okay, maybe the “they” is me. But I’m not alone.
Lehigh Valley was the home to A&B meats, a leading producer of processed pork products.
Our minor league baseball team is the Iron Pigs. Of course one of their mascots resembles a pig and another a strip of bacon.

I’ve been known to sneak bacon into recipes before like Cinnamon Bacon Donuts, Waffles, Potato Hash, Pretzels, Hot Bacon Dressing and Biscuits.

For today’s recipe I pulled out all the stops. Dark sweet cherries, maple sugar, bourbon maple syrup, oats and a double shot of bacon. You’ll get bacon every scoop of fruit AND in the crumble topping!

Boozy Bacon Cherry Crumble

Enjoy this sweet treat warm alone or with a scoop of vanilla ice cream. Oh heck make it Cherry Vanilla!

Boozy Bacon Cherry Crumble #SundaySupper

Yield: 4 to 6 servings

Ingredients

  • 3 cups dark sweet cherries, pitted fresh or frozen
  • 6 strips thick sliced bacon
  • 1/2 cup water
  • 1/4 cup bourbon maple syrup
  • 1 teaspoon vanilla
  • Crumble
  • 1 cup rolled oats
  • 1/2 cup butter melted
  • 1 tablespoon bacon fat
  • 1/2 cup maple sugar

Instructions

  • Fry bacon until crisp. Remove and drain on paper towels. Chop and set aside. Reserve bacon grease for topping.
  • Mix together cherries, syrup, water, vanilla and half the bacon.
  • Pour into baking dish.
  • Topping
  • Mix together oats, butter, bacon fat and maple sugar. Sprinkle over fruit mixture. Dot with the rest of the bacon.
  • Bake at 375 for approximately for 45 minutes to an hour allowing juices to thicken and topping to bake through.
  • Serve warm alone or with ice cream if desired.

Use peppers in any form: fresh, dried, ground, hot or sweet, your bread should contain peppers of some sort.

I admit this started out as a difficult challenge for me. I’m not big on spicy foods so chilies were pretty much out. Bell peppers and roasted reds are great ON bread, flatbread or pizza.
But I am a fan of fresh cracked black pepper. The only way to eat it is fresh ground. The taste and aroma speak for themselves. Lemon Pepper Pasta is a favorite here. Of course it needs to be homemade. Smothered in Parm cheese.

So naturally a Parmesan Cracked Pepper bread sounds good. A Parmesan Cracked Pepper Beer Bread with a touch of maple sugar sounds divine! I hope you agree.

Parm Cracked Pepper Bread

Parmesan Cracked Pepper Beer Bread #BreadBakers

Yield: 8 to 10 servings

Serving Size: 1 slice

Ingredients

  • 2 cups all-purpose flour
  • 1 cup whole wheat bread flour
  • 2 Tablespoons maple sugar
  • 1 teaspoon salt
  • 1 Tablespoon baking powder
  • 1 cup shredded parmesan cheese plus 2 tablespoons for garnish
  • 2 teaspoons black pepper
  • 1 12-ounce dark beer, at room temperature
  • 1 egg beaten with water for egg wash

Instructions

  • Preheat oven to 375.
  • Combine flours, sugar, salt, pepper, baking powder and cheese in large bowl.
  • Pour beer in a steady stream while stirring mixture to make a thick batter.
  • Scrape batter into a well-greased and floured loaf pan. Level the batter.
  • Brush the loaf top with egg wash. Sprinkle with Parmesan and pepper.
  • Place on center rack of oven and back until center registers 200 degrees, top of the loaf is nicely browned. This bread is a little on the dense side, so don’t rely on a “hollow” sound alone. Average bake time is 45 minutes.
  • Let the loaf cool in the pan on a wire rack about 10 minutes before removing it. A denser bread uses the extra time in the pan to finish baking so the center is not gummy. When ready, turn bread out onto the wire rack to finish cooling. Resist cutting the bread until cooled. Cutting hot bread releases too much moisture.

Black Bean Corn Casserole for corn lovers who can’t get enough corn. Slightly spicy pasta, bean and corn dish with a lime cilantro kick!

Welcome to another great Sunday Supper event. This week we’re sharing dozens of recipes to tempt the corn lover in you!

I live in eastern Pennsylvania in the heart of the Lehigh Valley. Corn fields are still plentiful around us. We have the best sweet corn from overflowing farm stands to Newhard’s Corn Shed and every store in between.

Soon fall will bring dry corn for the animals. When the warm weather fades you see the ears drying on the stalks. Brown papery husks replace the soft silks and green sheaths that covered that golden goodness.

Farmers will turn their fields into elaborate corn mazes for public pleasure. The best ones can be harder than you think to navigate from start to finish. Your GPS won’t help you in there!

For now I’ll enjoy fresh corn for a few more weeks. Time to freeze some too and make the season last even longer.

One way I love to enjoy corn is in a casserole. Mix corn with pasta, beans and seasoning for a great side dish or main meal.

Save the tomatoes for the salsa!

Black Bean Corn Casserole

Yield: 4 servings

Serving Size: 1 cup

Ingredients

  • 2 cups cream corn (homemade or canned)
  • 1 cup black beans, drained and rinsed
  • 1 cup cooked acini di pepe
  • 1 tablespoon fresh squeezed lime juice
  • 2 teaspoons fresh chopped cilantro
  • 1/2 teaspoon red chili flakes (optional)
  • salt and pepper to taste

Instructions

  • Stir together corn, beans and pasta.
  • Add lime juice and seasonings.
  • Pour into an oven safe dish and cook at 350 until thoroughly heated.
  • Serve.
