Cooks aren’t always pressed for time in the mornings – they just need new ideas. Think mug cakes, smoothie bowls, breakfast cookies and more. Show us the healthy way you wake up your breakfast – or wake up just for breakfast!

So true! I used to eat breakfast every morning without fail. Cereal, oatmeal pancakes, scrambles or omelets were always ready for consumption by my family. But now I’m older, it’s harder to get excited about breakfast just for me. Maybe it’s time to give my stomach a break from my black coffee liquid breakfast.

This easy parfait takes minutes to make. Warm oatmeal, yogurt, strawberries, dates topped with toasted oats, coconut and hemp heart seeds! Delicious!

Warm Oatmeal Parfaits #TheRecipeReDux

Ingredients

  • 1/2 cup quick cook oats
  • 1 cup water
  • 1 8-ounce plain or fruited non-fat or low-fat yogurt
  • 4 strawberries, diced
  • 4 dates, diced
  • 1/4 cup rolled oats
  • 1/4 cup coconut
  • 2 teaspoons hemp heart seeds

Instructions

  • Preheat oven to 400 degrees. Place coconut and rolled oats on a sheet pan. Toast until golden brown, about 5 minutes.
  • Bring oats and water to boil. Reduce heat simmer for about 5 minutes until thickened.
  • Layer oatmeal, fruit and yogurt. Top with toasted coconut, oats and hemp heart seeds.
  • Serve.

Winter Salads can be crunchy, sweet, and savory with fresh greens and tossed with seasonal fruits and vegetables, or maybe you prefer a comforting root vegetable salad or a salad made with rice or beans. The possibilities are endless! What is your favorite winter salad?

I don’t normally think of salad when the temperature is single digits. Chill Chasing Matchstick Vegetable Pasta Salad lights a fire under your tastebuds! Slender “Matchstick” cut broccoli, carrots, cauliflower and red bell pepper ignite carb packed ditalini.

Together these foods get your internal furnace cranked. Carbohydrates are your body’s main source of fuel. Have you ever felt warmer after eating a big plate of spaghetti? Balanced with vegetables, this salad won’t pack on the fat. Remember everything in moderation. 😉

Chill Chasing Matchstick Vegetable Pasta Salad

Ingredients

  • 2 cups cooked ditalini or similar pasta
  • 1 cup thinly sliced mixed vegetables (broccoli, carrots, cauliflower, red peppers)
  • 1 tablespoon minced chives
  • 1 teaspoon dried chili pepper flakes
  • dressing
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 tablespoons apple juice or apple juice concentrate
  • 1/2 teaspoon red pepper flakes
  • salt and pepper to taste

Instructions

  • Toss together cooked pasta, vegetables and chives.
  • In a separate bowl, whisk together dressing ingredients. Pour over pasta and vegetables. Stir to coat.
  • Refrigerate at least one hour to blend flavors.
